Moroccan Carrot Noodle Salad
















Serves 2


Ingredients:

  • 2/3 large carrots

  • 4 tbsp raisins

  • 5 tbsp sunflower seeds

  • 4 tbsp chopped fresh mint

  • 4 tbsp chopped fresh coriander

  • 4 tsp fennel seeds

  • 2 tsp ground coriander

  • 2 tsp paprika

  • ½ tsp cinnamon

  • 3 tsp ground cumin

  • ½ tbsp lemon juice

  • 6 tbsp olive oil


Directions:

  1. Spiralise the carrots.

  2. Mix spice mix (fennel seeds, ground coriander, ground cumin, paprika and cinnamon) with the olive oil and lemon juice.

  3. Pour over the carrots and with clean hands massage in until the dressing has completely coated the noodles.

  4. Put aside a small amount of the raisins, sunflower seeds, mint and coriander for garnish.

  5. Add the rest of the ingredients to the carrots and mix well.

  6. Transfer to a clean plate and sprinkle with the remaining raisins, sunflower seeds, mint and coriander.
